Now, a vegetarian Texas meal is almost unheard of… but I was a vege there for a few years and it can be done! It is much easier now than in the ’80s. Progress, yeeehawww!
Wilted Greens with Peanuts

Sweet Tea Recipe
1 cup fresh mint leaves
1 cup sugar
2 cups water
6 tea bags OR 12 teaspoons tea leaves
12 cups boiling waterlemon slice
fresh mint leaves
Combine mint, sugar and 2 cups water in a saucepan. Simmer 10 minutes. Set aside to cool. Now you have mint simple syrup! Place tea in crockery pitcher and pour boiling water. Let stand until cool. Remove tea bags/ strain tea leaves. Strain sugar syrup into cooled tea. Refrigerate. When cold, pour into glasses with ice. Garnish with slices of lemon and sprigs of fresh mint leaves.
