Hawaiian Night in Sayulita

So I thought I’d do it up Hawaii style for dinner tonight. Jon and Danielle are making Hawaii style pizza, with the mexico twist– jalapenos!

I’m making :Hawaii Style Pineapple Coleslaw

1 head of cabbage, shredded

1 fresh pineapple, diced

1/3 cup plain yogurt

2/3 cup of reduced-fat mayonnaise

1 1/2 tablespoons agave syrup

3 tablespoons  vinegar

Salt and pepper, to taste

Mix cabbage and pineapple in a large mixing bowl.

In a small bowl, combine the yogurt, mayonnaise, and agave syrup.Add dressing to the cabbage and pineapple slaw. Mix and add salt and pepper.Refrigerate for one hour.

And a yummy dessert I had visiting Hawaii once, butter mochi– mmmm mmmm!


  •  5 eggs
  •   2 c. sugar
  •  1 1/2 tsp. baking powder
  •  3 c. milk
  •   1 box mochiko ( sweet rice flour)
  •   1/2 c. melted butter
  • 1/2 cup coconut flakes (if you like)
  • 1 Tbs. vanilla

Preheat oven to 350 degrees. Beat eggs and sugar about 4 min. Add remaining ingredients. Beat until smooth. Pour into greased 13×9 inch Pyrex dish. Sprinkle with coconut if you so desire. Bake 1 hour. Cool and cut into  pieces
