So making a pie or two in the humidity of Mexico is quite a challenge.
For Astrid’s Dia I made two cherry pies with lattice butter crusts. We found canned cherries in our local specialty shop and bought them out. We’d previously went into the big city of Bucerias this week and looked for cherries there, but to no avail. It was very exciting to find them in town. Mexico is like that. You can look and look for something– beating your head against the struggle but when you finally just let it go, it shows up like a missing cat napping on your gate.
