Breakfast for an Early Riser

Preparation for the no eating out month has begun!
Astrid wakes up hungry.
I wake up still asleep.
I make pancakes the night before and leave them in the ‘fridge for her to reheat at will.  It makes for an easy morning and everyone is happy.
Slather them with Nutella and call it good.
No quick stops at the tienda  for a morning bun this month!
  • 1 cup  whole wheat flour
  • 1 Tbsp  sugar
  • 3 tsp baking powder
  • 1/4 teaspoon salt
  • 1 Tbsp vanilla extract
  • 1 Tbsp cinnamon
  • 1 large beaten egg
  • 2 tbsp coconut oil
  • 3/4 cup milk

Mix dry ingredients. Mix in the wet. Do the pancake thing on a skillet.

I like to let them cool on the counter then separate with freezer paper for ease in the morning.

You could then freeze at this point.
